These popsicles are soo good and soo simple to make! They make the perfect summery treat! I just love tropical fruits, and find passionfruit quite easily down here in south Florida, but if you can't find it, you can easily substitute the passionfruit for any other fruit.
I added some pearl powder to up the super powers, so not only are these pops delicious, they are anti-aging! A win-win!
To a blender, add your bananas, passionfruit pulp, and can of coconut milk. Blitz until fully combined, and the seeds are broken up well.
Add to a small saucepan and add your sugar, heating the mixture until the sugar is dissolved. Next, add your pearl powder and whisk until well combined.
Add to your popsicle molds and freeze overnight or about 6-8 hours.
Eat as is, or to make them extra pretty and fun, remove them from the molds, laying them on a plate. Cut open another passionfruit and squeeze the seeds and pulp over the popsicles. Pop them back in their molds and freeze for another hour or so.
These turned out super creamy! Enjoy!
