I got inspiration for this layer cake from the ever so talented Minimalist Baker. She created a vanilla cake, and it just looked so freaking good that I had to make it. But, I am always looking for ways to add different flavors and adaptogens or super powders as I like to call them.
So I came up with the flavor combination of deliciously sweet and tropical mango with immunity boosting matcha green tea powder in the frosting. And a huge bonus, not only is it vegan, its gluten free!

Matcha Coconut Milk Frosting:
Its best to keep it refrigerated as the coconut in the frosting will start to get soft and melty if left out for too long. It will firm up again in the cold refrigerator. Enjoy!
